Medjool Dates Almond Coconut (Print Version)

# Ingredients:

→ Coating

01 - 35 g shredded coconut

→ Base

02 - 100 g raw almonds
03 - 400 g Medjool dates, pits removed

# Instructions:

01 - Sprinkle the coconut into a flat dish. Roll your logs around in it so they get nicely covered.
02 - Split up the mix into sixteen even chunks. Use your hands to roll each one into a little log shape and press it tight.
03 - Toss the pitted dates into the chopped almonds in your processor, then run it until you get a sticky, combined mix. Pause now and then to scrape the sides if it’s sticking.
04 - Put the almonds into your food processor and pulse until you’ve got small, even pieces.

# Notes:

01 - Wet your hands and the outside of the logs if the coconut doesn’t want to stick.
02 - Rolling the mixture into balls instead of logs gives you tasty truffles.
03 - Swap the coconut for some crushed nuts if that’s more your thing.
04 - Try using pistachios instead of almonds for a totally different twist.
