Sprinkle the coconut into a flat dish. Roll your logs around in it so they get nicely covered.

Split up the mix into sixteen even chunks. Use your hands to roll each one into a little log shape and press it tight.

Toss the pitted dates into the chopped almonds in your processor, then run it until you get a sticky, combined mix. Pause now and then to scrape the sides if it’s sticking.

Put the almonds into your food processor and pulse until you’ve got small, even pieces.
