Cottage Cheese Onion (Print Version)

# Ingredients:

→ Filling

01 - Black pepper, freshly ground
02 - 2 tbsp olive oil
03 - 1/3 tsp salt
04 - 40 g pearl onions, sliced thin
05 - 1 egg
06 - 50 g parmigiano, finely grated
07 - 250 g cottage cheese

→ Crust

08 - 1 shortcrust pastry, either homemade or store-bought

# Instructions:

01 - Roll out the pastry into a tart pan. Poke tiny holes all over the base and sides using a fork. Bake it for about 10 minutes in a 200°C (390°F) oven that’s already hot.
02 - Beat one egg gently in a bowl. Toss in the parmigiano, salt, and cottage cheese, and stir everything into a smooth mixture.
03 - Trim, peel, and slice the pearl onions nice and thin. Give the surface a light coat of olive oil with a brush.
04 - Take out the partly cooked crust. Pour in the cheesy egg mix, spreading it evenly. Arrange the onion slices on top, oiled side facing up, and sprinkle on some freshly ground pepper.
05 - Pop the tart back into the oven. Let it bake for 30-35 minutes more at 200°C (390°F) until the filling sets firmly and the onions get a golden touch.

# Notes:

01 - Enjoy warm or cooled down, alongside a fresh green salad and your favorite white wine.
