Healthy Chickpea Mix (Print Version)

01 - 1 (15-ounce) can of low-salt chickpeas, drained and rinsed
02 - 1/2 tablespoon melted coconut oil
03 - 1/2 tablespoon pure maple syrup
04 - 1/2 teaspoon ground cinnamon
05 - 1/2 teaspoon kosher salt
06 - 1/8 teaspoon smoked paprika (optional)
07 - 1/4 cup raw pecans or almonds
08 - 1/4 cup pumpkin seeds (raw pepitas)
09 - 1/3 cup dried cherries
10 - 1/4 cup dark chocolate chips

# Instructions:

01 - Turn your oven up to 375°F (190°C) and line a baking sheet with parchment. Use paper towels to dry the chickpeas really well, pulling off any loose skins you see.
02 - Lay the chickpeas out evenly on the baking sheet. Pop them in the oven to bake for 10 minutes, no seasoning yet, so they'll crisp up nicely.
03 - Take the baking sheet out and drizzle the chickpeas with coconut oil and maple syrup. Sprinkle on cinnamon, salt, and paprika (if using). Toss them gently to coat before putting the tray back in the oven for another 10 minutes. Be careful—the tray is hot!
04 - Carefully give the baking sheet a little shake to move the chickpeas around. Spread the pumpkin seeds and pecans (or almonds) evenly across the tray. Put it back in the oven to roast for 8–10 minutes more, until everything is golden and crispy.
05 - Let everything cool completely on the tray. Once cooled, toss the chickpeas and nuts into a bowl together. Stir in the dried cherries and chocolate chips. Dish up or snack straight away!

# Notes:

01 - Keep the mix in a sealed container for up to a week. Using parchment paper bags can help them stay crisp longer.
02 - Freezing isn't a great idea because it makes the chickpeas and nuts soggy.
