Using a large bowl, blend together the cream cheese, butter, and powdered sugar until smooth and lump-free. In another bowl, whisk the pudding mix with milk for about 2 minutes or until thick. Combine the pudding mixture with the cream cheese blend, then gently fold in the whipped topping until everything looks smooth.
02 -
Toss the cookies into a food processor to grind until very fine. If you don’t have one, use a resealable plastic bag and a rolling pin to smash them into crumbs.
03 -
Start by spreading some pudding mixture across the bottom of a 9×13-inch pan. Follow with a layer of the crushed cookies. Keep layering until you’ve used all the pudding, finishing with cookies on top.
04 -
Mix the shredded coconut with green food coloring in a small bowl. Stir until the color spreads evenly and looks grassy. Sprinkle the colored coconut over the final cookie layer.
05 -
Place your candies (like Peeps, chocolate eggs, jellybeans) and optional mini chocolate bunnies on top of the coconut. Arrange them however you’d like for a fun, festive look.
06 -
Let the dish sit in the fridge for a couple of hours so the layers can set. Use a serving spoon to scoop out portions and dig in!
