Use your rice cooker and follow its directions to make the rice.

In a bowl, stir together the miso, sake, mirin, and sugar until combined.

Split the cooked rice into six portions. Use cling film to shape them into triangular patties.

Warm a skillet over medium heat, melt the butter, and cook the rice patties for 1 minute per side. Coat both sides with the miso mixture, then keep cooking until they are golden and crisp. Sprinkle chives and sesame over the top.

Using a medium-heated skillet with vegetable oil, fry the rice patties for about 1 minute per side. Brush soy sauce on as they flip back and forth until they’ve got a crispy coating. Add butter and sprinkle everything bagel seasoning on top before serving.
