Grilled Miso Butter Balls (Print Version)

# Ingredients:

→ Onigiri

01 - 2 cups water
02 - 2 cups of uncooked short-grain rice

→ Miso Flavour

03 - 1.5 tbsp of butter
04 - 1 tsp sesame seeds
05 - 2 tsp sugar
06 - 1 tbsp miso
07 - 2 tsp sake
08 - 2 tsp mirin
09 - 1 tsp finely chopped chives

→ Soy Sauce Flavour

10 - 1 tbsp soy sauce
11 - 1.5 tbsp butter
12 - 1.5 tbsp everything bagel seasoning
13 - 1.5 tbsp vegetable oil

# Instructions:

01 - Use your rice cooker and follow its directions to make the rice.
02 - In a bowl, stir together the miso, sake, mirin, and sugar until combined.
03 - Split the cooked rice into six portions. Use cling film to shape them into triangular patties.
04 - Warm a skillet over medium heat, melt the butter, and cook the rice patties for 1 minute per side. Coat both sides with the miso mixture, then keep cooking until they are golden and crisp. Sprinkle chives and sesame over the top.
05 - Using a medium-heated skillet with vegetable oil, fry the rice patties for about 1 minute per side. Brush soy sauce on as they flip back and forth until they’ve got a crispy coating. Add butter and sprinkle everything bagel seasoning on top before serving.

# Notes:

01 - Working with warm rice makes shaping easier.
02 - Press the rice patties tightly to keep them from falling apart while cooking.
03 - Be careful with miso paste when grilling, since it can burn quickly due to the sugar.
