Berry Cardamom Swirls: Experience the enchanting aroma of Nordic-inspired cardamom rolls studded with fresh berries. Each pillowy roll combines the exotic warmth of freshly ground cardamom with sweet, juicy berries, all wrapped in butter-enriched dough. The delicate spice creates an elegant twist on traditional sweet rolls that transforms your kitchen into a cozy Scandinavian bakery.

After discovering traditional cardamom buns during travel, I knew combining them with fresh berries would create something magical. The way the spice complements the fruit creates an irresistible combination that's become our favorite weekend treat.

Perfect Pairing Ideas

Serve these aromatic rolls with strong coffee or cardamom tea for an authentic Nordic experience. Create a breakfast spread with creamy yogurt, fresh berries, and honey for drizzling. For special occasions, add a light vanilla glaze that enhances the cardamom's warmth. In our home, we love serving them slightly warm with cultured butter and berry jam.

Sweet Variations

Transform these rolls with thoughtful adaptations while maintaining their elegant character. Try different berry combinations like blackberry-raspberry or blueberry-lingonberry. Create an autumn version with poached pears and warming spices. My family's favorite variation includes orange zest in the dough and a cardamom sugar glaze.

Storage Success

Maintain the perfect texture of your rolls with proper storage. Keep completely cooled rolls in an airtight container at room temperature for up to two days. For longer storage, freeze unglazed rolls for up to one month. When ready to serve, thaw overnight and warm gently in the oven to restore their fresh-baked softness.

Breakfast Planning

Make these rolls part of your morning ritual. Prepare the dough the night before and let it rise slowly in the refrigerator. Shape and proof in the morning for fresh-baked perfection. Create a Nordic breakfast board with cheese, cold cuts, and fresh fruit to complement these aromatic rolls.

After perfecting these rolls through countless Nordic-inspired mornings, I've discovered they're more than just breakfast - they're a way to bring the cozy comfort of Scandinavian baking into your home. Whether shared during morning fika or served at holiday gatherings, these cardamom berry rolls never fail to create moments of hygge. The combination of warm spices and fresh berries creates something truly special that makes any morning memorable.

Ingredients

→ Dough

01 120g butter
02 480ml milk
03 5g active dry yeast
04 100g white sugar
05 2 teaspoons vanilla extract
06 0.5 teaspoon of salt
07 700g all-purpose flour
08 2 lemons (only the zest)

→ Filling

09 220g berries (mixture of frozen raspberries and blueberries)
10 75g white sugar
11 75g brown sugar
12 2 teaspoons cardamom powder
13 1/2 teaspoon cinnamon powder
14 Some swirls of butter

→ Sticky Glaze

15 160g cream cheese
16 120g powdered sugar
17 3 tablespoons milk

Instructions

Step 01

Heat milk with butter until completely melted and set aside to cool down. Once milk is lukewarm add sugar and active dry yeast. Stir and set aside for 5-10 minutes until it creates a foam.

Step 02

Add flour, mix roughly, then add salt, vanilla extract and lemon zest. Mix well with the spoon until there are no more visible traces of flour. Set aside for 5 minutes so that the liquid will be absorbed by the flour. Work by hand or in the stand mixer for at least 10 minutes or until the dough is smooth and very elastic even if sticky.

Step 03

Place the dough in a lightly greased bowl. Cover with a cotton ball and let it rise in a warm place until it doubles the volume (2 and a half hours).

Step 04

Deflate the dough and roll out on a floured surface into a rectangle (about 1 cm and a half in height). Sprinkle with brown sugar and white sugar mixed with cinnamon and cardamom powder. Place berries over prepared rectangle and add swirls of butter. Roll up the rectangle and cut into 12 equal parts.

Step 05

Place rolls in a rectangular baking tray lined with baking paper, leaving space between them. Cover with cotton cloth and let rise for another 45 minutes to 1 hour.

Step 06

Bake in preheated static oven at 180°C for 35-40 minutes. Let cool after baking.

Step 07

Prepare the glaze by mixing cream cheese with milk and finally with the sifted powdered sugar. Cover rolls with the prepared glaze and serve.

Notes

  1. Rising time varies based on temperature and yeast freshness
  2. Can double glaze ingredients for extra sticky rolls
  3. Can use cardamom pods instead of powder with additional preparation
